Winemaking:
Harvesting is done when the grapes are fully ripe, therefore, depending on the weather conditions of the year, the date ranges from the last ten days of August to the first of September. Harvesting is done by hand, the grapes arrive in the cellar perfectly intact and healthy.
After a light pressing, the must undergoes a cold static decantation and is sent to alcoholic fermentation.
This is carried out in steel tanks at a controlled temperature of 18°C.
At the end of fermentation the wine ages on its fine lees for some months, until it is ready for bottling.
The aging process continues in bottle for further 4/6 months before release.
