Picked by hand, the Barbera grapes destined to the production of "Le Rose" arrive in the cellar perfectly intact and ripe; here they are pressed and led to fermentation. The precious task of conducting the alcoholic fermentation is entrusted to indigenous yeasts, it is conducted in steel tanks at a controlled temperature of 28 ° C and is completed in about 12 days. The contact with the skins throughout the fermentation phase stabilizes the color and promotes the extraction and combination of tannins making them softer. Malolactic fermentation is completed as soon as the alcoholic fermentation is finished, followed by racking and a period of aging of about six months in steel containers. Bottling is expected in late spring of the year following the harvest. A further 6 months of aging in bottle is expected before the release.
The bouquet is very typical, characteristic of the variety, vinous with ethereal nuances of violet over which the fruity notes of plum and cherry prevail. The flavor is intense, the strong character of Barbera gives sign of itself, with the intense color that dominates and rounds the tannins and the freshness that leaves the palate savory and clean.
