Winemaking:
The Ruchè grapes destined for the production of our selection are harvested by hand and arrive in the cellar perfectly intact and ripe. The grapes are destemmed and crushed and undergo alcoholic fermentation in steel tanks at a controlled temperature of 26°C. In this phase the extraction of color and of the precious aromatic fraction characteristic of Ruchè takes place from the skins. As soon as the extraction is considered complete, the must is separated from the skins and its transformation into wine is completed. Malolactic fermentation is conducted and completed in steel tanks. A filtration prepares the wine for the bottling which is followed by a period of refinement in bottle before release.

Sensory impressions:
